Tomato Pie

  • 1 single pie crust

  • 3/4 cup mozzarella cheese, divided

  • 1/2 cup cheddar cheese, divided

  • 3 large tomatoes

  • 1 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon oregano

  • 1/2 teaspoon black pepper

  • 1/2 cup fresh basil

  • 1/2 cup mayonnaise

  • 1 cup grape or cherry tomatoes

 

Preheat oven to 450.
Peel tomatoes (Boil water and dip tomatoes in for 3 minutes. Put in ice water for easy peeling.)
Salt tomato slices and place on paper towels to dry.
Place pie crust in the bottom of the pan and poke with fork.
Sprinkle 1/4 cup of mozzarella cheese on bottom and bake for 10 minutes.
Combine 1/4 cup cheddar cheese and 1/4 mozzarella cheese in small bowl.
Sprinkle tomato slices with garlic, oregano, and black pepper.
Layer 1/2 tomatoes and 1/2 cheese mixture and half basil. Repeat layers.
Combine remaining 1/4 cup cheddar cheese, 1/4 cup mozzarella cheese, and 1/4 cup mayonnaise.
Reduce heat to 350 and bake uncovered for 30-35 minutes.
Let cool before serving.
